CHICKEN DELI… short for “chicken delicious” was founded in the year 1983. Seeing the love of Bacolodnons for eating, the founder or more popularly known as Mamang used her extraordinary cooking skills in the kitchen to carry out a secret marination recipe of chicken and pork. Mamang would wake up early morning everyday to go to the market to personally choose the chicken, pork and all the freshest ingredients used to make the special marinade. She would cut and apportion the whole chicken into pechopak (breast and wings), pa-a (leg and thigh), isol (chicken butt), baticolon (gizzard), liog (neck) and atay (liver). These chicken parts were then mixed with the special marinade and char-grilled to perfection to assume the distinct juicy and tender Chicken Deli taste with a crisp twist. Mamang altogether offered a palate-tingling sensation that range from the simple joys of chicken and pork to the hearty basics of hot soups and flavored rice to create a lip-smacking cornucopia of food mixes and textures. Certainly, a complete feast for the most discriminating taste bud.
Chicken Deli initially opened in a small yet clean, open-air hut
located at 14th Lacson Street, Bacolod City. In the first years
of business, the restaurant immediately became a "habit"
for many local residents in Bacolod City and Negros Province. Yet, not only the natives became instant fans but tourists were frequent visitors as well. Indeed, Chicken Deli turned out to be one of the most popular destinations to drop by in Bacolod soil.
