Santiago bills its menu as “a continent of crossroads cuisines” headlining as it does choice dishes
from all the countries of the whole continent of South America: Argentina, Brazil, Chile, Colombia,
Peru, Ecuador, Uruguay, Venezuela, Bolivia and Guyana.

Santiago is probably the Philippines’ only restaurant dedicated to South American cuisine and
will be breaking ground in the Philippine food scene. It is yet another reflection of Chef James
Concepcion’s personal proclivity for the unusual and the uncommon.

One thousand years of Incan food culture built up by layer upon layer of multinational
influences. Spanish. African. French. Chinese. Japanese. Lebanese. Palestinian. Egyptian.
Jewish. And, yes, German.

Santiago’s impressive menu mirrors the international quality of South America’s cooking. A surf of
appetizer items yields such esoterica as: Causas, Ceviches, Anticuchos, and Chicharrones. The rice
selection alone offers 24 variations from the various countries in the region.

Filipino diners will find a commonality between South American and Pinoy staple ingredients:
fresh seafoods, pork, potatoes, corn, okra, rice and tropical fruits. The South American experience
is however delivered authentically by Chef James and Chef Mario who share an obsession with the
unusual and a passion for the real.
