Agos by Chef Tatung

A new Filipino restauratant, Agos opens at the SM Mall of Asia. Agos explores the culinary exchanges brought by the galleon trade and beyond.

Set in an elegant 120-seater nautical themed enclave, Agos is the perfect setting for history and gastronomy to come together.

Celebrity Chef, TV host and best-selling author, chef Tatung Sarthou heads the restaurant. He explains that the concept developed from his desire to deepen the discourse on Filipino Food, shifting perspectives from a being purely indigenous, into a cuisine with a centuries-old global tradition.

Chef Tatung’s passion is indigenous cooking methods but he is also at the forefront of innovation in Philippine cuisine. The creative mantra that drives Agos: Local reimagined. Dishes featured in Agos showcases these, like the Pollo con salsa Tsokolate or Chicken braised in Dark chocolate sauce, a rediscovered recipe from turn of the century Philippine kitchens or his Zarsuela Marina in Black Tausug curry sauce, inspired by the chicken Pianggang, which uses the tribal burnt coconut as the base of the curry paste.

At Agos Chef Tatung not only hightlight the cookery, but the produce from local farmers and purveyors of sustainable natural, endemic and indigenized ingredients to aid him in telling his story.

Agos is located at the ground floor of the north wing of the mall near Imax and facing Manila bay. The new restaurant also leads to the Manila-Acapulco Galleon trade museum that will open early next year making Agos a one of a kind dining destination in Manila.
